5 original recipes of iced tea

You have already learned how to make homemade lemonade, but this is not the only drink that is pleasant to cool in the summer heat. Iced tea will cope with this task no worse. Here are some original recipes from tea bakers.

Tea helps fight thirst and compensate for the loss of mineral salts and vitamins. Especially good soft drinks based on black, green, red tea, karkade, oolong. An indispensable condition for their preparation is a good grade tea. As a rule, it is tea leaves in placer, not choux teabags. “When brewing, the leaves should not be in hot water longer than the recommended time, as tannin is released from them,” says Evgenia Yarchenko, the tea chef. “This makes the drink bitter and unpleasant.” We wrote about how to choose and brew tea correctly. here.

The original taste and aroma of cold tea give a variety of additives - spices, herbs, berries and fruits. Unusually interesting are the drinks based on their combinations. You can't go wrong by “making friends” in a teapot mint leaves with cardamom, ginger and black pepper. Melissa perfectly harmonizes with lemon, lime, lemongrass, honey. Spices are especially good in black and red tea, and fruits and berries in green.

An excellent tonic can be made, for example, from green tea, basil and watermelon. Basil will add savory notes to ice tee, and watermelon flesh will give freshness and a pleasant sweet taste. "Green tea, strawberries and lemon juice are also an unusually successful combination. The drink will be refreshing and moderately sweet.

Ice tee not only has great taste and is very refreshing. This drink is also good for health, thanks to the high content of essential oils, flavonoids, mineral salts and vitamins.

Cold tea, especially black and red varieties, can be drunk with milk. It is best served separately and mixed with the drink immediately before use.

The traditional component of any refreshing drink is ice. With it, you can quickly lower the temperature of the tea and, importantly, keep it low for a long time. Tea can be served with lumpy (in cubes), chopped (crushed into small pieces) and ground ice.

Almost immediately and to the lowest possible temperature, ground and crushed ice cools, but it also melts quickly. This ice is good to use after cooling and slightly diluting the drink when it is already cold enough and too thick. The best option for ice tee is ice cubes. It cools efficiently and does not melt very quickly, and the tea is not diluted too much with water, unlike the option with ground ice. It should be noted that any ice to some extent dilutes tea. Therefore, it should be made strong enough.

Fill a glass with ice should be about 1/2 - 3/4. If you put too little ice, the cooling will be slow and inefficient; if you overdo it, the drink will turn out to be watery.

If you prefer to cool the tea in the fridge or freezer, wait until the beverage has cooled completely before placing it there. Otherwise, the tea will grow cloudy, and its taste will spoil.

Ice tees are served in transparent decanters and poured not into cups as regular tea, but into glass cups. They can be decorated with berries and pieces of fruit.

Best tee

Ingredients: 4 tbsp. water, 4 tsp. tea leaves (black or red), 1 tsp mint (dried or fresh), 1/4 tsp cardamom, 2 ground grains of black pepper, 40 g of sugar, 2 g of ginger (chopped, fresh).

Instructions. Pour the water into a small saucepan and boil. Add cardamom, mint, black pepper, chopped ginger and cook until the water has gained flavor and aroma. Add tea leaves, sugar and cook for another 5 minutes. Strain the mixture and cool. Serve with ice cubes.

Mapenzi tea

Recipe provided by the Tea Directorate of the Republic of Kenya.

Ingredients: 2 liters of water, 1 tbsp. tea leaves (black, red), 5 stems with lemongrass leaves, 1/2 bunch fresh mint, 1 lemon or lime, 1 small fresh ginger root, 5 tbsp. honey

Instructions. Separate the leaves of the lemongrass from the stems. Rub the stalk of lemongrass, tie the leaves with kitchen cord and set both ingredients aside. Peel and wash the ginger, then crush it in the mortar. Wash lime or lemon and cut into small pieces. Pour the water into a small saucepan, put on the fire and bring to a boil. Add to the pan with water all the ingredients except honey. Reduce heat and simmer another 3 minutes. Remove the pan from the stove and leave for 5 minutes, previously covered with a lid. Strain the tea, add honey and mix well. Refrigerate the cooked tea in the fridge for 2 hours.

Summer berry tea

Recipe Evgenia Yarchenko, tea chef.

Ingredients: 2 tsp. Green Kenyan tea, 200 g fresh strawberries, 1/4 tbsp. freshly squeezed lemon juice, 400 ml of hot water, 1/2 tbsp. cold water, 1/3 c. sugar, 1 tbsp. ice cubes.

Instructions. Heat the water to a boil. Pour hot water into any wide container and leave to cool for 5-7 minutes so that the water temperature drops to 70-85 degrees. Pour 2 tsp into the tea pot. green tea, pour the tea with cool water and let it brew for 5 minutes. Then let cool to room temperature. Take a bowl, put in it fresh strawberries, add sugar and mash with a fork to the state of a homogeneous mixture. Take a small saucepan, pour in it 1/2 tbsp. water, add mashed strawberries with sugar and, while stirring, bring to a boil over high heat. Take a jug and pour in it cooled tea, add strawberry puree, mix. If you are not very fond of the pulp, you can separate the strawberry juice from the mashed potatoes with a sieve. Pour lemon juice on top and mix again. Add ice cubes before serving.

Watermelon tea with basil

Recipe Evgenia Yarchenko, tea chef.

Ingredients: 1 tsp black Kenyan tea, 400 ml of hot water, 1/6 part watermelon pulp, 1 small bunch of fresh basil, 1 tsp. sugar 1/4 tbsp. lemon juice, 1 tbsp. ice cubes.

Instructions. Bring water to a boil. Pour boiling water into the teapot and leave for 2 minutes to heat the kettle. Then pour the water out of the kettle. Pour into the kettle 1 tsp. tea, put basil leaves on top, pour boiling water. Add 1 tsp. sugar, mix and let drink brew for 5 minutes. Then cool the beverage to room temperature. Take the pulp of watermelon, separate it from the bones and cut it into cubes. Place the watermelon slices in a bowl, add the lemon juice and mash with the help of a blender. Take a jug, put in a puree of watermelon. Pour the cooled tea on top, mix well. Place the ice before serving.

Mint nat

The recipe of Sergey Suslin, bar manager of the restaurant "Totoro"

Ingredients: 40 ml of mint tea, 40 ml of calice melon (Japanese drink), 40 ml of lychee puree, 5 ml of lemon juice, 10 g of lychee berries, 100 ml of water, 2 g of lemongrass, ice cubes.

Instructions. Put ice in a glass, pour tea, kalpis, juice, mashed potatoes, water and mix well. Decorate lychee and lemograss.
